Buckwheat (which is not part of the wheat family) produces a seed that is 3-D triangular in shape and has a black hull. The hull has been removed in this grain leaving it a greenish yellow color. These soft seeds have a mild flavor, but when toasted or roasted, they have a delightfully intense flavor. They can be steam-cooked like rice for salads and side dishes or ground in your own mill into fresh flour.A favorite addition to waffles and pancakes.
Cooking time: 15 minutes in 2-5 cups of water.
