Greetings! This month our classes are focusing on grains (http://www.foodwisestorage.com/recipe-grains). Come to our classes on Tuesday evenings at 7:00pm to learn how to cook with more than just wheat. So far we have made:

We have received some new products in:
Sweet Potato Dices. Dehydrated Sweet potatoes already diced. Easy to puree or serve warmed with butter after reconstituting. Check out the Sourdough Sweet Potato Bread
Honey Granules. These dry granules can be used as a sugar substitute, for baking or reconstitute in water to make honey!
Xagave. Pint, quart and gallon containers along with the cookbooks. Wow what a way to go sugar free!!
Coconut Milk Powder. This is a tasty alternative to artificial creamers or dairy. Great for smoothies, soups, baking, cooking and more. Coconut oil is burned quickly by the body for energy rather than stored as fat. It also helps to increase the metabolic rate. You get a great creamy taste with essential fatty acids that are good for you. Here is a great dip recipe for vegetables using coconut powder:
1 tsp Soy Sauce
¼ cup Sweet Chili Sauce
½ cup Peanut Butter, Crunchy (or use dehydrated peanut butter powder with cooked wheat berries!)
¼ cup Coconut Milk Powder
2 medium Carrots, cut into chunky sticks
4 sticks Celery, cut diagonally into thick slices
1 Lebanese Cucumber, cut into thick sticks
½ cup Water, boiling
Place peanut butter, water, coconut milk powder, soy sauce and chili sauce in tall jug. Mix with hand held blender till smooth. Refrigerate for 2 hours. Place dip into 2 cup serving bowl on large platter. Surround with cold crisp vegetables. Makes 8 servings
Lecithin Granules. Lecithin makes your bread stay soft and helps it retain moisture. It also acts as a binder by helping your ingredients stay uniformly suspended throughout the mixture. It prolongs the freshness of your bread, extends the shelf life and makes the crust more tender. It helps make the dough more elastic which allows for better rising. My favorite plus for using lecithin is that it helps the bread release from the pans. Lecithin supplement producers claim that lecithin has a beneficial role in:
- Cardiovascular health
- Liver and cell function
- Fat transport and fat metabolism
- Reproduction and child development
- Physical performance and muscle endurance
- Cell communication
- Improvement in memory, learning and reaction time
- Relief of arthritis
- Healthy hair and skin
- Treatment for gallstones
Vanilla Powder: Good for putting into beverages. You can also mix into powdered or granulated sugar for a vanilla-flavored sugar to sprinkle on foods such as cinnamon/vanilla toast. Create your own hot chocolate mix with fresh cocoa, spiced mocha mix, or use it as a light glaze for fresh corn or carrots. In essence, powdered vanilla is the perfect addition to any food or beverage that you wish to enhance with the sweet, rich, yet subtle taste of pure vanilla.
